What it is
Eggs Benedict is poached eggs and hollandaise on a split English muffin. The crab version swaps the usual ham or bacon for crab meat, which changes the dish considerably: it is lighter, and the sweetness of the crab sits against the lemon and capers rather than against smoked pork.
Ours uses Dungeness crab, the crab most associated with the northern California coast, and is one of four benedicts on the menu.

- There is no single standard name. Menus print it as crab benedict, crab eggs benedict, or by the type of crab used. Ours is listed simply as “Dungeness Crab”, under the Benedict heading.
- I don’t see “crab benedict” on your menu
- Look under Benedict, where the section names the preparation once, and each line names only what goes on top. Ours is the “Dungeness Crab” line.
- What comes with it?
- Two poached eggs, served with an English muffin, breakfast potatoes and salad. The crab comes with arugula, lemon, capers and dill.
- What other benedicts do you serve?
